Arabasi Recipe – Aksaray

How It Is Made

Making the Dough:

Boil 1.5 cups of water by adding salt.

2. Make a slurry of flour with the remaining water; Pass through a wire strainer. Add it to the boiling water, stirring rapidly.

3. Cook until it reaches the consistency of pudding, stirring constantly.

4. Pour it onto a tray about two fingers thick and let it cool; When it cools down, put it in the refrigerator.

5. To serve with soup, cut into baklava shapes.

Preparation of the Soup:

1. Put water in a pot, add chicken, tomato paste and half of the red pepper and boil.

2. When the meat becomes soft, shred it into finger-sized pieces.

3. In a separate pot, mix the margarine and flour and fry them without changing the color much. Add the rest of the tomato paste and red pepper into this roux and stir for 3-4 minutes.

4. Add this mixture to the hot chicken broth.

5. Add shredded chicken meat and boil.

6. Serve with dough and plenty of lemon.

TIP: If enough hot oil is poured to lightly cover the soup dough during service, it will be brighter.
