Cullama Recipe and How to Make It – Aksaray

How It Is Made

Clean and wash the duck, pour water and ½ teaspoon of salt until it is covered, cover the pot and let it cook. The water from the cooked duck is drained and cooled, and the meat is separated from the bones. For the slurry, put the butter in the pot, after it melts, pour the flour into it and fry it over low heat, stirring constantly. When the color of the flour begins to darken, turn off the fire and pour 2 cups of the cooled boiling water into it, 1 cup of drinking water and salt. The bottom of the pot is lit and the flour mixture is cooked by stirring constantly until it becomes smooth. When the mixture reaches the consistency of pudding, boil it for 2 minutes, then turn off the fire and pour the mixture into the tray. Shredded hot duck meat is placed on top of the bulama. For the zere, butter is melted in a pan, when it gets hot, it is removed from the stove, sprinkled with red pepper flakes and poured over the meat and served.
