Dolma Manti Traditional Recipe – Aksaray

Ingredients

  • For the dough:
  • 1 cup flour
  • 1 egg
  • ½ teaspoon salt
  • ¼ cup of water
  • For the yoghurt sauce:
  • 100 g strained yoghurt
  • 2 cloves of crushed garlic
  • 1/2 tea glass of water
  • Topping material:
  • 1 tablespoon butter
  • ½ tea glass of olive oil
  • ½ teaspoon red pepper flakes
  • For the filling:
  • Half a kilo of minced meat
  • 1 medium onion
  • Half bunch of parsley
  • ½ teaspoon of salt
  • ½ teaspoon red pepper flakes
  • 1 teaspoon black pepper
  • 1 teaspoon cumin

How It Is Made

Onion Minced Meat, Parsley and Spices are mixed together to prepare the filling.

To prepare the dough, flour is poured into the kneading bowl, the middle is opened, eggs, water and salt are added. Cover the dough with a damp cloth until it reaches a smooth consistency and let it sit for 30 minutes.

The rested dough is divided into chard. Sprinkle a small amount of flour on the chard, roll it out and cut it into small squares. A pinch of the prepared filling is placed inside each piece and shaped like an amulet.

Dumplings are thrown into boiling salt water over high heat and boiled. When the dough is cooked, remove it from the stove and pour 2 glasses of cold water on it.

Yoghurt is poured on the bottom of the tray, the boiled manti is placed on the tray and pepper sauce is drizzled over it.
