
Ingredients
- 1 kg fresh opium (Afiyan)
- 2 large tomatoes
- 250 g green onion
- 1 bunch of parsley
- 1 lemon
- 1 teaspoon of salt
- 2 tablespoons of olive oil
How It Is Made
All vegetables are washed thoroughly with plenty of water. Opium (Afiyon), green onion, tomato and parsley are finely chopped. Chopped vegetables are mixed in a bowl. In another bowl, mix lemon juice, salt and olive oil thoroughly with a fork and blanch. The prepared sauce is poured over the salad when it is to be served and mixed.
Note: It is called “Afiyan Salad” in the local language. “Afiyan” is the name given to the leaves of the poppy plant when it first blooms in the field. After these leaves are collected from the field, their roots are cut and sorted. It is prepared like lettuce salad. When making afiyan salad, other desired vegetables can be added depending on the season. It can also be prepared with the addition of boiled eggs.
