How to Make Ankara Tava
The meat prepared from the lower quarter of the arm or rib of a yearling (one-year-old male lamb) that has been slaughtered and rested at least a day in advance is cleaned from its membranes and cut into palm-sized pieces. An amount of water is added to cover the meat placed in a special copper pan. The salt is removed and the pan heated with wood is placed in the oven. Meanwhile, the oven should be at medium temperature. The time the meat stays in the oven is about 5 hours. The cleaned rice is added to the broth of the meat coming out of the oven, and butter is added. Chop green pepper and tomato into it. It is placed in the oven to cook. The cooking time of the rice in the oven is approximately 40 minutes. The meat that was previously taken out of the oven is placed on the rice cooked in the oven; It is put back into the oven and fried for another 10 minutes until it is ready to serve.
