Ay Coregi Recipe and How to Make It – Ankara

What are the Ingredients of Mooncake?

3 cups flour

150 g margarine

2-3 tablespoons of powdered sugar

1 coffee cup of milk

1 teaspoon fresh brewer’s yeast

2 eggs

lemon zest

Inside Material:

1 glass of walnuts or hazelnuts

Half a glass of granulated sugar

Half coffee cup of milk

1 teaspoon of new spring

Half a coffee cup of cinnamon

3 tablespoons krik krak or stale bread crumbs

2 tablespoons seedless grapes

How to Make Mooncakes

Flour is sifted, brewer’s yeast crushed with milk, powdered sugar, oil, eggs, lemon zest are placed in the middle and kneaded, covered and let it rise (the dough should double in size).

Preparation of the Filling: Add ground walnuts, krik krak, cinnamon, new spice, grapes to the milk, stir and add granulated sugar.

The fermented dough is divided into small pieces and rolled out to a diameter of 9-10 cm. The prepared stuffing is placed, wrapped and shaped into a crescent. Brush it with egg yolk and place it on a tray. It is baked in a medium oven.
