How It Is Made
The dough, which is prepared from wheat flour in a consistency that will not stick to the hand, is rested for a while, rolled out thinly in the form of a phyllo dough and cut into squares. After boiling in boiling water, it is filtered and placed on a tray. Garlic yoghurt or an ingredient called kurut, unique to our region, which we call hengel sauce, is crushed and poured on top, and it is served with small pieces of onion and roasted butter in it. It should be eaten without waiting or cooling.
