
What are the ingredients for Arabaşı Soup?
1 chicken cut into small pieces
2 cups flour
4 spoons of oil
4 cups chicken broth
1 spoon of tomato paste or 3 tomatoes
Sufficiently hot red pepper
salt
How to Make Arabaşı Soup
For the dough: In a tray, two glasses of sifted flour are mixed and dissolved in one and a half glasses of water. Then, add three glasses of chicken broth and salt over the fire to make a thick slurry. Spread evenly on the tray and cool. The previously cleaned chicken is boiled whole. The meat is thoroughly softened. Heat three spoons of oil in a pot. Two glasses of flour are lightly roasted. Add salt, four glasses of chicken broth and hot red pepper, mix and boil. Thus, the soup is prepared. Small pieces of cooked chicken meat without bones are added to this soup. The middle of the dough in the tray is emptied to the size of a soup bowl, and the soup bowl is placed in the middle of the tray. When the soup is ready to be served, the dough is first scooped into a spoon, then dipped into the soup bowl and drunk.
