
What are the Ingredients for Meat Tirit?
1 piece of Kutludüğun village bread
1 kg meat (lamb or beef)
2 tablespoons of butter
2 medium sized tomatoes
1 tablespoon tomato paste
1 large onion
2-3 cloves of garlic
3 medium sized green peppers
Enough hot water to fill the cooking pot
Chili Pepper
black pepper
mint
salt
How to Prepare Meat Tirit
Meat is cut into cubes. The butter is fried and the meat is placed on top and cooked a little. Add salt, green pepper, tomato, garlic cloves and finely chopped onion and let it cook over medium heat. Pour the tomato paste and the boiled water in a separate bowl over the cooking meat, mix (we should add a little more water) and let it cook over low heat until the meat becomes soft. After the cooked food is removed from the stove, it is left to rest for 10 minutes. Until the meal is cooked, village bread is cut into small, flat pieces on a tray. Breads are placed in the serving bowl. The cooked and rested food is poured abundantly by first pouring the water over the bread with a ladle. Then the meat is taken and placed on the bread. By putting chili peppers, black pepper and mint on the meat, the tirit is ready to be eaten and served hot. Note: Tirit is made with different materials in different regions of Ankara. Tirit dish can also be made by adding potatoes along with meat. It should be made by adding cubed potatoes onto the cooked meat.
