Urus Kapama Recipe – Ankara

What are Urush Closure Materials?

3 kg lamb cubes

10 cloves of garlic

3 medium onions or 10 shallots

1 tablespoon tomato paste

3 tomatoes

1 teaspoon of chili pepper

3 green peppers

1 cup chickpeas

1 teaspoon of pepper paste

3 cups of rice

How to Make Urush Closure

Rice is kept in a bowl of hot salted water. Meanwhile, in another bowl, add cubed meat, finely chopped onion or whole shallot, peeled garlic, chili pepper and salt and mix. This blended mixture is placed into a special closing jar. The mouth of the earring is closed upside down so that it is inside the pot. Chickpeas soaked overnight are placed on the edge of the earring. Enough water is poured on it. Close the lid of the deep pot. A few pieces of meat are left out. (to check its cooking). When the meat is cooked, rice soaked in hot salted water is added into it. After the rice is cooked, it is served by placing a cubech in the middle. Note: Küpec: Although it has various sizes, its mouth diameter varies between 12-15 cm and its length varies between 25-30 cm, and there is a hole with a diameter of approximately 1 cm at the bottom.
