How to Make Kışabat Pita
The meat to be made with wild meat is taken the day before and cured. After the nerves of the loin and rib meat of the sheep are removed, they are ground with a large knife in a meat grinder with fifty percent beef meat. Diced onion, garlic, pepper and oil are added and placed in the oven on a tray. Then, eggplant and tomato are added, seasoned, mixed and left to cool. Add minced meat and mix. Stuffing is spread on the dough, which is rolled out thinly with the skill of mastery, grated katik cheese is added on top, it is stretched on a shovel for approximately 1 meter and 20 cm, then thrown into the oven and baked. It is served with long chopped parsley, roasted tomatoes and peppers on a wooden board.
